Bellwether is the Finger Lakes’ first hard cider producer, specializing in artisanal American style craft ciders made using high quality local fruit. Started by Bill and Cheryl Barton in 1999, Bellwether remains a family owned and operated business.
Our ciders are crafted entirely from our own fruit grown on Black Diamond Farm, a small family-owned orchard on the west slope of Cayuga Lake. Each of our ciders is a unique blend that expresses the diversity of flavor and aroma found in our apples. We grow over 100 varieties of apples, which include many heirloom and European cider varieties. We specialize in food-friendly dry and semi-dry ciders, and our ciders are all naturally gluten-free.
Natural cider and perry made in small batches with minimal manipulation using ambient yeast fermentation. We use fruit from our own orchards along with wild-crafted fruit. We also produce raw apple cider vinegar.

Star Cider sprouted from a love of making hard cider with family and friends and a legacy of cider-making that dates back over three generations. Cider making is a labor of love that we cultivate by immersing ourselves in every aspect of the process. From growing trees, to picking, pressing, blending, and fermenting fresh juice into hard cider, we’re hands-on every step of the way. We have learned from experience that being involved in every stage of the cider making process allows us to maintain the highest level of quality and consistency. Our craft ciders are made up of unique blends of 100% New York apples. We also add fresh ginger, citrus, and local rhubarb, strawberries and hops. Our mission is to forge a new path in the industry by continuously pushing the boundaries of classical cider making processes in pursuit of unraveling the mysteries within the science of cider. Cheers to Stellar Cider!
